Ingredients
Scale
2 lbs ground beef (80/20 recommended for moisture)
1 box (6 oz) Stove Top Stuffing Mix (Savory or Turkey flavor)
1 cup water
2 large eggs
1/2 cup ketchup
1/4 cup packed brown sugar
2 tablespoons apple cider vinegar
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×5 inch loaf pan or line a baking sheet with parchment paper for a free-form loaf.
In a large bowl, combine the ground beef, the contents of the stuffing seasoning packet, and the eggs. Mix gently with your hands until just combined. Do not overmix.
Add the dry stuffing mix (not the seasoning packet contents, which you already added) to the meat mixture. Mix again until the stuffing is evenly distributed throughout the meat.
Form the mixture into a loaf shape and place it in the prepared pan or on the baking sheet.
In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to create the glaze. Spread this glaze evenly over the top of the meatloaf.
Bake for 50 to 60 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing. This helps keep your meatloaf moist.
Notes
For an extra savory flavor, substitute half of the ground beef with ground turkey.
If you prefer individual servings, form the mixture into 8 small loaves or ‘meatloaf cupcakes’ and reduce the baking time to about 30 minutes.
Serve this **quick family dinner** with brown gravy for classic comfort food perfection.
