You can turn your favorite dip into a satisfying main course with this creamy, high-protein spinach artichoke chicken casserole. This easy, one-dish meal respects your busy schedule while delivering comforting, cheesy flavor.

  • 1.5 pounds boneless, skinless chicken breast, cooked and shredded or diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 10 ounces fresh spinach, chopped
  • 14 ounces artichoke hearts, drained and quartered
  • 8 ounces low-fat cream cheese, softened
  • 1 cup plain Greek yogurt (or low-fat cottage cheese for higher protein)
  • 0.5 cup low-fat cottage cheese (if not using for the main creamy base)
  • 1 cup shredded mozzarella cheese, divided
  • 0.5 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, warm the olive oil. Add the minced garlic and cook for one minute until fragrant.
  3. Add the chopped spinach to the skillet. Cook until the spinach wilts down completely, about 3 to 5 minutes. Remove from heat.
  4. In a large bowl, combine the cooked chicken, wilted spinach mixture, and quartered artichoke hearts.
  5. In a separate bowl, mix the softened cream cheese, Greek yogurt, cottage cheese, Parmesan cheese, salt, pepper, and nutmeg until smooth and creamy. This is your high-protein sauce base.
  6. Fold the creamy sauce mixture into the chicken and vegetable mixture until everything is evenly coated.
  7. Transfer the entire mixture to your prepared baking dish.
  8. Sprinkle the remaining mozzarella cheese evenly over the top of the casserole.
  9. Bake for 20 to 25 minutes, or until the casserole is hot throughout and the cheese topping is bubbly and lightly golden brown.
  10. Let the casserole rest for 5 minutes before you serve it.

  • For a keto chicken casserole variation, skip adding any rice or pasta and serve this dish over cauliflower rice or with a side salad.
