Ingredients
Scale
1 cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
1 cup granulated sugar
1 teaspoon ground cinnamon
½ cup unsalted butter, melted
1 cup milk (whole or 2%)
1 large egg
1 teaspoon vanilla extract
For the Cinnamon Sugar Topping:
½ cup packed light brown sugar
1 tablespoon ground cinnamon
¼ cup (4 tablespoons) cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a medium bowl, whisk together the flour, baking powder, salt, granulated sugar, and 1 teaspoon of cinnamon for the batter.
In a separate small bowl, whisk together the melted butter, milk, egg, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix with a whisk or spatula until just combined. Do not overmix; a few lumps are fine. This forms your batter base.
Pour the batter evenly into the prepared baking dish.
In another small bowl, mix the brown sugar and 1 tablespoon of cinnamon for the topping. Cut in the cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Sprinkle the cinnamon sugar topping evenly over the batter in the baking dish.
Bake for 30 to 35 minutes, or until the topping is golden brown and a toothpick inserted near the center comes out mostly clean. The center should look set but still slightly gooey.
Let the Snickerdoodle Cobbler cool for at least 10 minutes before serving.
Serve warm, ideally with a scoop of vanilla ice cream for the ultimate comfort food dessert experience.
Notes
For an extra gooey texture, slightly underbake by 2-3 minutes. The center will firm up as it cools slightly.
You can substitute the base ingredients with a box of Snickerdoodle cookie mix for a quicker version, following package directions for a batter consistency.
This warm cinnamon sugar dessert pairs perfectly with a scoop of cold vanilla ice cream.
