Ingredients
Scale
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 small yellow onion, finely chopped
2 cups chicken broth
1 cup milk (whole or 2%)
8 ounces sharp cheddar cheese, shredded
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch of nutmeg
Instructions
Melt the butter in a large saucepan over medium heat.
Add the chopped onion and cook until soft, about 5 minutes. Do not brown the onion.
Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
Gradually whisk in the chicken broth until smooth. Bring the mixture to a simmer, stirring until it thickens slightly.
Reduce the heat to low. Slowly stir in the milk. Heat through, but do not let the soup boil.
Remove the saucepan from the heat. Add the shredded cheddar cheese one handful at a time, stirring until each addition is completely melted and smooth before adding more.
Stir in the salt, pepper, and nutmeg.
Taste and adjust seasoning if needed. Serve this hearty soup immediately.
Notes
Shred your own cheese from a block for the best melting quality and smoothest texture. Pre-shredded cheese often contains anti-caking agents that can make the soup grainy.
For a thicker soup, simmer the broth and milk mixture for a few extra minutes before adding the cheese.
Serve this homemade cheddar soup with homemade croutons or crusty bread for dipping.
