Make this incredibly moist orange juice cake from scratch. It features a bright, zesty citrus flavor and a simple orange juice soak and glaze, making it a perfect easy orange dessert for brunch or a simple treat.

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup fresh orange juice
  • 1/4 cup whole milk
  • 1 tablespoon fresh orange zest
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the orange zest.
  5. In a small bowl, mix the 1/2 cup orange juice and milk.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the orange juice mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  9. While the cake cools slightly, prepare the glaze: Whisk together the powdered sugar and 2 tablespoons of fresh orange juice until smooth.
  10. Poke holes all over the top of the warm cake using a skewer or fork. Pour the glaze evenly over the warm cake, allowing it to soak in.
  11. Let the cake cool completely in the pan before slicing and serving.

Notes

  • For an extra bright orange cake, use the zest of one whole orange.
  • This cake is wonderful as a simple orange loaf cake if baked in a 9×5 inch loaf pan; adjust baking time accordingly.
  • If you prefer a thicker glaze, reduce the liquid in the glaze slightly.
