Make this easy one pot lasagna soup for a quick, hearty, and cheesy dinner. You get all the classic lasagna flavors with minimal cleanup, perfect for busy weeknights.

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 bay leaf
  • 8 ounces lasagna noodles, broken into 1-inch pieces
  • 1 cup water (if needed for thinning)
  • 1 cup ricotta cheese, divided
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 1 cup shredded mozzarella cheese
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef or sausage and cook until browned. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the beef broth, crushed tomatoes, and tomato sauce. Add the bay leaf. Bring the mixture to a boil.
  5. Once boiling, add the broken lasagna noodles. Reduce the heat to maintain a simmer. Cook, stirring occasionally to prevent sticking, for about 10 to 12 minutes, or until the pasta is tender. If the soup becomes too thick, add up to 1 cup of water.
  6. Remove the bay leaf from the pot. Stir in 1/2 cup of the ricotta cheese and the Parmesan cheese until melted and creamy.
  7. Stir in the fresh spinach until it wilts, about 1 minute.
  8. Ladle the soup into bowls. Top each serving with a dollop of the remaining ricotta cheese, shredded mozzarella cheese, and a sprinkle of extra Parmesan cheese.

  • For a vegetarian option, substitute the meat with 1 pound of plant-based ground or add extra vegetables like mushrooms and zucchini.
