1 cup granulated sugar
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 cup water
1/2 cup butter, cut into pieces
2 large eggs
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Place the unbaked pie crust on a baking sheet.
In a medium saucepan, whisk together the sugar, flour, cocoa powder, and salt.
Gradually whisk in the water until the mixture is smooth.
Cook the mixture over medium heat, stirring constantly, until it thickens significantly, about 5 to 7 minutes. Do not let it boil rapidly.
Remove the saucepan from the heat. Add the butter pieces and stir until the butter is completely melted and incorporated into the hot fudge base.
In a separate small bowl, lightly beat the eggs. Slowly temper the eggs by whisking about 1/2 cup of the hot fudge mixture into the eggs.
Pour the tempered egg mixture back into the saucepan with the remaining hot fudge base, whisking constantly until fully combined. Stir in the vanilla extract.
Pour the warm fudge filling into the unbaked pie crust.
Bake for 30 to 35 minutes, or until the edges are set but the center still has a slight wobble. The center will firm up as it cools slightly.
Let the pie cool on a wire rack for at least 30 minutes before serving.
