  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup shredded Gruyère cheese (or Provolone)
  • 1/4 cup crispy fried onions (optional, for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Season the chicken breasts on both sides with salt and pepper. Set aside.
  3. Heat the olive oil in a large oven-safe skillet over medium heat. Add the sliced onions and cook slowly for 15 to 20 minutes, stirring occasionally, until they are deeply softened and caramelized. This step builds the main flavor.
  4. Sprinkle the flour over the caramelized onions and stir for one minute.
