1 sheet frozen puff pastry, thawed
4 ounces Brie cheese, rind removed and cut into small cubes
1/4 cup cranberry sauce
Optional: 1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a mini muffin tin or line a baking sheet with parchment paper.
Unfold the thawed puff pastry sheet onto a lightly floured surface. Use a round cookie cutter (about 2.5 inches in diameter) to cut out circles from the pastry. You should get 12 to 16 circles.
Gently press each pastry circle into the cups of the mini muffin tin, forming a small cup shape. If using a baking sheet, place the circles on the prepared sheet.
Place one small cube of Brie cheese into the center of each pastry cup.
Top the Brie with about 1/2 teaspoon of cranberry sauce.
If desired, brush the edges of the pastry lightly with the beaten egg wash for a golden finish.
Bake for 12 to 15 minutes, or until the puff pastry is golden brown and flaky, and the Brie cheese is melted and gooey.
Remove from the oven and let the bites cool in the tin for a few minutes before carefully transferring them to a serving plate. Serve warm.
Notes
For extra flavor, you can sprinkle a tiny piece of fresh rosemary on top of the cranberry sauce before baking.
If you do not have a mini muffin tin, you can bake these on a flat baking sheet, but shape the pastry edges up slightly to hold the filling.
Ensure the Brie is cold when you cut it; this makes cubing much easier.
