Make this easy, creamy Italian sausage pasta in one pot for a satisfying weeknight dinner with minimal cleanup. This recipe delivers comfort food flavor in under 30 minutes.

  • 1 pound Italian sausage, casings removed
  • 1 pound rigatoni or penne pasta
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach (optional)

Instructions

  1. Brown the Italian sausage in a large skillet or Dutch oven over medium heat. Break the sausage into small pieces as it cooks. Drain off excess grease.
  2. Add the chopped onion to the skillet with the sausage and cook until softened, about 3 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the dry pasta, diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper to the skillet. Stir everything together.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom. The pasta should be tender and most of the liquid absorbed.
  6. Remove the skillet from the heat. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  7. If using, stir in the fresh spinach until it wilts into the sauce.
  8. Serve the creamy sausage pasta immediately.

Notes

  • For a spicy cajun sausage pasta, use hot Italian sausage or add 1 teaspoon of Cajun seasoning when you add the broth.
  • If you prefer a thicker sauce, allow the pasta to simmer uncovered for the last 5 minutes of cooking time.
  • You can substitute smoked sausage for Italian sausage in this recipe for a different flavor profile.
