  • 2 cups water or milk (dairy or non-dairy)
  • 1 large very ripe banana, mashed
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Optional: 1 teaspoon vanilla extract
  • Optional Toppings: Sliced banana, peanut butter, chopped nuts

Instructions

  1. Combine the rolled oats, water or milk, mashed banana, cinnamon, and salt in a small saucepan.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring frequently.
  3. Reduce the heat to low and continue to cook for 5 to 7 minutes, stirring often, until the oatmeal thickens and reaches your desired creamy consistency. The ripe banana will dissolve and naturally sweeten the oats.
  4. Remove from heat. Stir in the vanilla extract, if using.
  5. Divide the oatmeal into bowls. Top with sliced banana, a spoonful of peanut butter, or nuts before you eat.

  • For maximum creaminess, use whole milk or a higher-fat non-dairy milk like oat or soy milk.
