  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, seeded and minced (optional)

Instructions

  1. Prepare the vegetables: Dice the tomatoes, bell pepper, and red onion. Mince the jalapeño if you are using it.
  2. Combine the beans and corn: In a large bowl, mix the rinsed black-eyed peas, black beans, and corn.
  3. Add fresh produce: Add the diced tomatoes, bell pepper, red onion, cilantro, and optional jalapeño to the bean mixture.
  4. Make the dressing: In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper until well combined.
