  • Pinch of salt

Instructions

  1. Place the cottage cheese in a small, microwave-safe mug or ramekin. Use an immersion blender or small food processor to blend the cottage cheese until completely smooth.
  2. Add the egg, cocoa powder, sweetener, vanilla extract, almond flour, baking powder, and salt to the mug.
  3. Mix all ingredients thoroughly with a fork until you have a smooth batter. Scrape down the sides as needed.
  4. Stir in the chocolate chips, if using.
  5. Microwave on high for 60 to 90 seconds. Cooking time varies based on microwave wattage; start checking at 60 seconds. The brownie is done when the top looks set but the center is still slightly soft for a fudgy texture.
  6. Let the brownie cool in the mug for 2 minutes before eating directly from the mug.
