Instructions
Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking pan.
Unroll the crescent roll dough and press it evenly into the bottom of the prepared pan. Do not stretch the dough; just press the seams together to form a solid layer.
In a small bowl, mix 1/2 cup granulated sugar and 1 tablespoon cinnamon. Sprinkle half of this cinnamon sugar mixture evenly over the dough layer.
In a medium bowl, beat the softened cream cheese until smooth. Add 1/2 cup granulated sugar, the egg, and vanilla extract. Beat until the mixture is fully combined and creamy.
Spread the cheesecake filling evenly over the cinnamon sugar layer in the pan.
In a small bowl, combine the melted butter with the remaining 2 tablespoons of granulated sugar and 1 teaspoon of cinnamon. Drizzle this mixture over the cheesecake filling.
Sprinkle the remaining half of the initial cinnamon sugar mixture over the top.
Bake for 25 to 30 minutes, or until the edges are lightly golden brown and the center is mostly set.
Let the bars cool completely in the pan on a wire rack. This step is important for the filling to set properly.
Once cool, cut the dessert into bars. Store leftovers in the refrigerator.
Notes
For a thicker, bakery-style treat, use two cans of crescent roll dough, layering the second half on top of the cheesecake filling before baking.
If you prefer a stronger cinnamon flavor, increase the cinnamon in the topping mixture by 1/2 teaspoon.
