No-Bake Buckeye Graham Cracker Sandwiches

Make these easy, no-bake Buckeye Graham Crackers by sandwiching a creamy peanut butter filling between crunchy graham crackers and dipping them in rich chocolate. This is a simple, delicious sweet snack.

Ingredients

  • 2 cups creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 box (about 14 ounces) graham crackers, whole sheets
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil

Instructions

  1. In a medium bowl, combine the creamy peanut butter, powdered sugar, softened butter, and vanilla extract. Mix until the filling is smooth and fully combined.
  2. Take one whole graham cracker sheet and spread a layer of the peanut butter filling evenly over the top surface.
  3. Place another whole graham cracker sheet directly on top of the filling, creating a sandwich. Gently press down.
  4. Repeat this process until all the filling and crackers are used. You should have several graham cracker sandwiches.
  5. Carefully cut each sandwich in half diagonally to create triangles, or into squares.
  6. In a microwave-safe bowl, combine the semi-sweet chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth.
  7. Dip each peanut butter graham cracker sandwich into the melted chocolate, coating most of the surface but leaving a small portion of the graham cracker visible, similar to a classic buckeye candy.
  8. Place the dipped crackers on a baking sheet lined with parchment paper.
  9. Refrigerate the Buckeye Graham Crackers for at least 30 minutes, or until the chocolate coating is firm.

Notes

  • You can use crunchy peanut butter if you prefer more texture in your filling.
  • For a cleaner dip, use a fork to lower the cracker into the chocolate, then lift and tap the fork gently on the side of the bowl to let excess chocolate drip off before placing it on the parchment paper.
  • Store these easy peanut butter treats in an airtight container in the refrigerator.
